I’m all about quick, easy recipes that are wholesome and nutritious. Truth be told, I don’t love spending time in the kitchen, but I do love to eat well and eat foods that will fuel my body. This lunch was super to easy to make. You essentially just toss everything into one skillet.
- Sprouts organic quinoa duo with grilled zucchini, butternut squash and tomatoes
- Lacinato kale
- Lemon juice
- Avocado oil
I start by oiling the pan and cooking the chicken and then after the outside of the chicken is cooked a bit, I toss in the quinoa bag. I love products like the @sprouts quinoa bags because they’re made of all whole food ingredients, just frozen. You can also stream the bag if you prefer. Then I like to spruce it up with some veggies, so I add in some kale, but you can really add any other veggies you’d like. Salt and pepper to taste.
